Ingredients:
- 1 cup lenses rinsed and drained
- 3 bay leaves
- 4 tbsp olive oil
- 1 large white onion, finely chopped
- 2 cups extra long white rice
- ¼ tsp turmeric (optional)
- 1 tsp salt
- 4 cups chicken broth or water

In a medium saucepan, bring 4 cups of water to a boil with the bay leaves, then add lenses, reduce heat to medium, partially cover saucepan and cook 15 to 20 minutes or until just cooked through and tender but not mushy or falling apart. Drain, remove bay leaves and reserve.
In a large saucepan, heat 4 tablespoons olive oil over medium-high heat, then add the onion, stirring occasionally, until golden brown.
When the onion is golden, add rice and cook for 2-3 minutes, stirring gently, you will notice it quickly changing from off-white to bright white and feeling heavier on the spoon. Don’t let it get brown.
