Carrot and sweet potato soup with croutons

50 g of rice

30 g of butter

6 carrots

4 slices of bread from the day before

1 liter of vegetable broth

1 sweet potato

1 leek

1- In a saucepan, melt the butter with a drizzle of oil and add the carrot, sweet potato and the peeled and chopped leek. Cook for about 8 minutes.

2- Add the rice to the pan along with the vegetable broth. Cover everything and cook for about 20 minutes.

3- In the meantime, cut the slices of bread and fry them in abundant oil to make croutons.

4- After 20 minutes, mash the ingredients of the saucepan and, if necessary, drain them to obtain a soup consistency.

5- Serve with a drizzle of oil, a little ground pepper and over the croutons.
