Quinoa soup with vegetables and chicken

250 g of pumpkin
200 g of chicken breast
100 g of quinoa
8 Brussels sprouts
1 spring onion
1 leek
1 tablet of vegetable broth

1-Chop the onion, leek and pumpkin into cubes and sauté them in a pan with a drizzle of oil for about 4 minutes.
2- Remove the outer leaves of the Brussels sprouts, cut them into four parts and pour them into a saucepan with two liters of water and a vegetable broth tablet.
3- Put the quinoa in a bowl with water to hydrate it. Stir and change the water several times, until foam comes out.
4- In a pan with a drizzle of oil, toast the drained quinoa a little and add it to the pan with the vegetables for about 20 minutes.
5- Cut a chicken breast into cubes, add the pepper and brown it a little in a pan with a drizzle of oil. When it is ready, add it to the pot with the other ingredients.
