What seems like a blink of an eye holy week has entered our lives and after 2 years in which the subject of celebrating the holidays properly has been a bit complicated, today we can finally jump over with unique joy that many of us are already vaccinated, even though we can now travel easily or with fewer restrictions to any part of the country or to different parts of the world.
Now if you are one of those people who prefer to stay at home, relax, enjoy your cooking and make the most of the moment to rest, today we offer you an option so you can take advantage of Easter and not only that, it is also a really rich option in which We will not add any red meat protein or other off animal product, because we know how important this is for many people season.
That’s why we leave you a recipe based on lentils and sweet potato, which we are sure could become one of your favorites. Without adding anything else, let’s continue with the recipe.
enchiladas

- Corn tortillas

For the filling
- 3/3 cups sweet potato (diced)
- 1 cup cooked lentils
- 1/2 white onion (finely chopped)
- 2 garlic cloves (finely chopped)
- 1 tbsp vegetable oil
- 1 tbsp salt

- 4 tomatoes
- 1/2 white onion
- 3 cloves of garlic
- 1-2 broad chillies
- 1/2 cup water
- 1 tsp salt

We’re going to put the chilies in the water and let it stand until it boils. For our part, we let the tomatoes, onion and garlic roast in a pan. Once we have the chilies and the other ingredients ready, we put everything in the blender and let it stand until we get a homogeneous mixture.
For the filling
On the other hand, for the filling, we put the oil in a pan with the garlic, onion, and sweet potato and leave it until the sweet potato softens or reaches the appropriate cooking time. This should be al dente and when you get it we add the lentils, check the taste and add salt.
Preheat the oven to 170°C
In a baking tray we put part of the sauce until we cover the bottom, we shape the enchiladas and for this we have to heat the tortillas so that they remain a little soft, we fill the previous mixture and we close to taste. We will do the procedure with all the enchiladas, we will finish by bathing them with a little more sauce and that’s it.
TIP: You can melt cheese if you like, Swiss enchiladas style.
We bake for 20 minutes.
