Greek Lentil Soup or Soupa Faki Recipe

Ingredients for 4 people:

  • 1 cup of lentils (about 200 grams).
  • 1 red or white onion.
  • 1-2 sticks of celery, trimmed.
  • 2 carrots.
  • A pinch of cayenne pepper (optional) or a pinch of hot pepper.
  • 2 cloves of garlic.
  • 1-2 bay leaves.
  • 1 teaspoon cumin.
  • Several leaves of chopped fresh cilantro or parsley.
  • Vegetable soup.
  • 1 tablespoon of tomato concentrate or 2-3 ripe tomatoes.
  • A dash of wine vinegar.
  • Native olive oil.
  • Salt.

Elaboration:

Better to have the lentils from the day before in water (so make sure they soften after cooking in the soup), although you can wash them and add to the broth. You have to fry them vegetables first in the pot and then you boil them in water together with the lentils (so that the whole thing becomes quite liquid, like very soupy lentils). You can add spices as you like, adapted to your palate (accepts for example hot, pepper and some curry). Aromatic plants such as bay leaves, coriander, parsley, celery or cumin give this dish its personality. Used vegetable soup so that the result will be tastier.

1. Fry vegetables:
