Don’t throw it away! Three ways to use leftover rice

Since we don’t like waste in the kitchen at Animal Gourmet, we have come up with some ways to take advantage of leftover rice from meals. Flip it over and eat rich without repeating with the same ingredient.

We love this cereal because it is versatile: you can serve it both salty and sweet; spicy or with sweet and sour notes. What do you say? Do we take advantage of it?

Aracinis, Italian rice croquettes

This dish is the pride of Sicily. It is very common to find them everywhere and at any time, hot and delicious. Like everything in life, they often change in size, shape and filling, but they are a safe bet towards something delicious.

  • 2 cups of White rice cooked and refrigerated
  • 1/2 cup of Parmesan
  • 3 egg
  • 8 cubes of mozzarella cheese fresh
  • ground bread Italian style
  • The oil to fry
  • 1 cup of Marinara sauce


Place a large thick-bottomed saucepan over medium heat and add a little oil for frying. In a medium bowl, mix the Parmesan cheese with the rice and an egg very well.

Form each arancino by taking a small part of the mixture, inserting a cube of mozzarella in each ball and pressing well.

Beat the remaining two eggs and pass each arancino in them, pass it in the breadcrumbs and shake off the excess.

When the oil is ready, dip the already breaded arancini until they are golden brown and cooked. Remove from the oven and quickly put on a plate lined with absorbent paper to absorb the fat.

Use it just like potato when making pancakes. They can be enriched with any type of vegetable: spinach, broccoli, chard … and the addition of tuna will make a complete and easy meal.

  • A cup of cooked rice
  • A tin of tuna
  • A bunch of cooked spinach
  • Two tablespoons of breadcrumbs
  • Egg
  • Onion cut in half
  • enough salt and pepper
  • vegetable oil for frying
  1. Finely chop the onion and sauté it over medium heat until it becomes translucent, add the spinach until reduced and the tuna. Turn off and book.
  2. Heat the rice with a drop of water. Stir in the tuna mixture and the ground bread until you get a homogeneous mass.
  3. Complete with the egg and form balls with your hands. Mash and make pancakes.
  4. Heat a pan over high heat and pour in a little vegetable oil. Once hot, brown the pancakes until golden brown on both sides.
  5. To serve.

Indeed. One way to take advantage of leftover rice is to use it as a cream substitute when making soup. What do you like? Broccoli? Pumpkin? Cauliflower? All vegetables follow the same procedure!

We share a recipe with carrot.

  • 6 large carrots
  • 1/4 finely chopped onion
  • 1 liter and a half of water or vegetable broth
  • 1/4 cup of rice
  • The juice of half a lemon
  • Zest of half a lemon
  • 1 teaspoon of grated or powdered ginger
  • Salt to taste
  • Olive oil
  1. On the stove, put the carrots with the skin on direct heat to brown them. When they turn black, remove from heat, peel and cut into thin slices.
  2. In a saucepan, fry the onion in the olive oil until it becomes translucent. Add the carrots and sauté for five minutes.
  3. Add the water or broth and the oatmeal. Cook covered for twenty-five to thirty minutes.
  4. When the carrots are soft, blend everything and add the juice and the grated lemon and ginger. Season to taste.
  5. Return to the pot and add a little water if it is too thick. To serve.
