Cream of tomato, carrot and ginger

On this occasion we propose a cream of tomato, carrots and ginger. It’s awfully simple and, according to food experts, it’s an ideal comforting dish for a light dinner.

Ingredients for 4 people

1 Kg Tomatoes

6 carrots

Ground ginger

Peppermint (a few leaves)



Extra virgin olive oil

Step by step


Put a drizzle of olive oil in a saucepan and, over low heat, brown the tomatoes for a few minutes.

Meanwhile, peel and chop the carrots. It is not necessary to cut them very small, because then we will grind everything. We add to the pot.

1 Kg Tomatoes, Extra Virgin Olive Oil, 6 Carrots.

Cook everything together for about 35 minutes, over low heat. We will move from time to time.

After this time, add the ginger and season to taste. We put everything in a blender glass and mix with the blender. We serve decorating with a few mint leaves and that’s it.
