Don’t underestimate them: chicken wings can be cooked in a thousand ways. These are just three of the simplest and richest.
Recipe 1: marinated wings in the oven
Clean 2 kg of wings, eliminating the tip part and the residual feathers. Prepare the marinade by mixing well in a large bowl 3 tablespoons of ketchup sauce, 1 of mustard, 1 of garlic powder and the juice of one lemon. Put the wings in the bowl and mix to soak them, let them rest covered for 1 hour in the refrigerator.
Place the wings separated from each other in the chosen pan, which we will have lined with kitchen paper. Cook at medium temperature for 20 minutes, turn them over and cook another 10 minutes. Serve with garnishes of your choice.
Recipe 3: stewed wings with vegetables
Clean 1 kg of wings and brown them in a thick-bottomed saucepan, so that they begin to cook and take on color. Drain and add 1 onion, 1/2 bell pepper, 1 stalk of celery, all cut into small pieces; in addition, 2 cloves of garlic, peeled and whole. Add salt and cook over low heat until all the vegetables lose their stiffness.
Then add 2 round courgettes or courgettes cut into pieces and 2 medium potatoes peeled and cut into large cubes.
Also put the wings, cover everything with the broth, add 1 bay leaf, salt to taste and seasonings. Cook over low heat until the potato is cooked through.
Recipe 3: homemade “legs”
Separate the fleshy part of the wings from 2 kg of chicken wings and reserve the others to make the soup. Remove the skin from these “legs” and steam them for about 20 minutes, seasoning with salt.
Once cooked and drained, let them cool slightly. In an airtight bag (like those used for the freezer, perhaps) or in a large plastic container, put the breadcrumbs, grated cheese, garlic powder, paprika. Separately, beat 3 eggs with a drop of water, salt, pepper, chopped parsley. Pass the legs in the flour, then in the beaten egg and finally put in the bag and shake until well breaded.
They are ready for frying or browning in the oven. Accompany them with sauces of your choice.
